- Dr. Edwards’ research interests include the intersection of physical activity, nutrition, and chronic disease, specifically examining the post-prandial period. In collaboration with Drs. Stephanie Kurti and Jeremy Akers, she focuses on examining what factors may influence how the body responds to high-fat and high-carbohydrate meals.
